Do you have the manufacturers instructions for the shower tray? I would insist it is installed to that spec. I can't imagine they recommend using foam to stick it down? I thought the standard was flexible tile adhesive or bed of mortar. Was mainly interested in the walls to make sure they hadn't put any plasterboard in there, but sounds like it should be OK with the panels.
Not sure on the U trims you mention, so not sure how they work, but if you can get the following to work in your installation, it may provide some additional security:
