Making the most of the weather with a chicken focussed weekend.

Grilled chicken breast with a honey and mustard marinade this afternoon. Then it’s a beer can chicken tomorrow.

Had a ‘Back To The 90’s BBQ’ today

Back then all I knew about bbq’ing was grilling underdone burgers and overdone sausages.

Not the best photo, but I was ready to eat - ribs were done following a recipe from the DJ BBQ book and worked really well, kebabs were from the butchers and the flat bread was also done on the BBQ (most of them weren't as well done as the one I had).

I had these yesterday and I must say they were bloody amazing. Not sure I can be arsed to go back to my homemade ribs from scratch when things like this are so much easier

Home made piri piri chicken cooked over charcoal yesterday. Infinitely better than a nandos.

Bank holiday here, so leisurely cooking.

Sausages, marinaded chicken and prawns.



Plus some asparagus, which was lovely.

Some outdoor cooking before the promised rain returns tomorrow.

Courgettes stuffed with puy lentils, onions and mint. Topped with ricotta.

Peppers stuffed with chickpeas, sundried tomatoes and onions.

Tomatoes stuffed with bulgur wheat, spring onions and lime.

Tandoori lamb steaks. Lamb merguez sausages. Pork sausages with pineapple and chilli.

Caught fish! Then annoyed wife.





Stuffed fish.






Cooked fish over charcoal.



Enjoyed fish, wife now less annoyed.

Yeah you can , 2 hrs in the slow cooker with coke/apple juice then 2 more in the smoker basting towards the finish , half the price . Trust me I've tried so many variations for ribs this is the simplest and no different to the rest , fall off the bone etc etc

Agreed. Find a butcher and buy some proper ribs, I just used the Schwartz BBQ rub, chilli flakes, sugar and honey and then on a spit. They were amazing, even if I do say so myself

Beef short ribs today.



After an overnight dry brine, I braised them for about 1.5 hours.



Then they has a few hours to cool in the fridge before a run with salt, pepper and cayenne pepper.



It was quite wet outside by this point. So I don’t have any photos, but they spent 30 minutes on indirect medium heat with Applewood smoke. Then there was 5 minutes over direct heat with a BBQ sauce glaze.

In the mean time I set let my onions soak up some left over braising juice.



Sweetcorn, asparagus and potatoes all done on the grill as well. Ended up a lovely bank holiday lunch.
