I like the fact there are people like him about. It would be boring if everybody was sensible all the time. Stuff like making ice cream with dry ice is different or coating a cake with a paint gun is fairly bonkers, but you could say the same about people who make working scale models of Ferraris. Why do it? - because it is there to be done.There is no doubt that HB is innovative, imaginative & totally skilled but not in the real world - what on earth is a "destination restaurant" this sounds like yuppie-speak to me. The Fat Duck will be succesful for the simple reason that people will beat a path to the door in order to say that they have been! - scalp hunting, no more or no less.
In the real world of catering how can one justify two hours to prepare mashed potato, how many establishments can afford to tie up an oven for 24hrs to cook the "perfect" steak.
Why do you think that Senor Feria (el Bulli) can afford to close 6 months of the year? Because of the prices he charges for the other 6 months.
I really do admire HB but the worst thing that will happen is he will be plagiarised to death by chefs with less knowledge & inferior resources:soapbox
