Toying with the idea of buying a VW T5 Transporter to convert to a camper, useful for my racing weekends (and festivals!).

Anyone done this, or used any local company for parts or full conversions?

Aiming for this sort of finish, and not afraid to do a lot of the work myself:

I know you stipulated local, but these people sell new VW campers (new and retro). Also have an online shop for parts

I thought it might be worth giving them a call if you were after advice on conversions.
They do bespoke conversions and all standards and might be able to give you a few pointers.
