Thai salad of shredded vegetables with king prawn, deep fried tiny fish and cashews. Delicious.

Tea last night: Bolognese burger. There's two 1/4 patties hiding under there somewhere. Somewhat scruffy but tasted better than it looks.



And breakfast/lunch today: Double filling pasty. One end is chorizo, ramiro pepper and melty cheese. The other is a caerphilly cheese and leek mix. Misjudged the size and my appetite for this one. Forgot I wasn't Cotty.

Haven't posted for a while. Tonight I made chicken tagine.

The picture just doesn't do it justice. It was exquisite.

Looks tasty! Got the recipe? I need to try tagine at some point! I'm not a fan of cous cous though, so I would have to serve mine with rice instead.

Yeh, it's really easy and actually I don't have a tagine, so it's not strictly a tagine.

Finely chopped onion, 2 cloves of crushed garlic, - fry until soft
4 chicken drumsticks - add in and brown
Crushed ginger, about the same amount as garlic, 2 tsp cumin, 2tsp cinnamon - add in
Bit of chicken stock once it's all cooking
Tin of chopped tomatoes
Carrots chopped
Leeks chopped
Salt pepper
Chopped Lemon skin (only the rind without the pith) I was supposed to use preserved lemons but couldn't find any in the supermarket
Paprika
Cayenne pepper, again I was supposed to us harissa paste but didn't have any.

Let it all simmer for as long as you want and until it's nearly dry.

Then add green beans, chopped mint and corridander

Finish it when the beans are a bit soft

Serve with couscous with mint and sultanas

Top with pine nuts and chopped corridander and mint.

Er, yes.

It only looks 'restauranty' because I put it in a bowl and tipped it on the plate before garnishing.
