As a true spice addict, making my own wings is the only way I can find wings spicy enough. Weirdly, I've only just got into making them though!!

I've been following this guy's method: https://www.youtube.com/watch?v=YyAAzVykxHs

It seems that pickle juice is commonplace in the US, but not over here, so I substituted a bit of vinegar.
Instead of Franks Hot sauce I use this: https://www.hotsauceemporium.co.uk/product/psycho-...

I've currently got a batch marinating in the fridge for cooking on Sunday when I get back from a wedding.

Anyone got any other methods as it seems there are loads of different ways.

I like a bit of heat, but I reckon that may be a few steps too far for me. I usually finely chop a scotch bonnet, then mix it with sweet chilli sauce, soy sauce and Cinese five spice, salt and black cracked pepper.

Sousvide the wings. Drain and pat dry and leave to cool.
Toss in flour with hot chilli powder, s&p.
Deep fry till golden.
Meanwhile melt some butter and whisk in franks buffalo sauce.
Toss wings in sauce and serve with jalapenos and sauces of your choice.

If you want it hotter just use hotter sauce.

The butter is a key step as the fat helps the spice from the sauce "stick" to your tongue and will increase the flavour / heat.

Cool thanks, I guess this is the main alternative to cooking in the oven?
And so true on the butter, I think years ago I cooked wings then just poured the sauce from the bottle over them, and it was certainly missing the true wing feel to it.

Homemade bone dust rub with a smattering of corn flour , rub half a potato over a hot grill , then cook for 30 mins turning the wings frequently , Can't be simpler .

I see you're in London. Have you tried the Viper wings from Orange Buffalo in Ely's Yard, off Brick Lane? If they aren't spicy enough for you, I'd be amazed. Because they provide you with gloves to eat them with, to save burning your fingers.

As I wrote that sentence above, I was considering adding a caveat of: excluding the Viper wings at Orange Buffalo and the Hot Wing challenge at The Red Dog Saloon.

I've tried both and failed dismally. But for me, they are at the end of the spectrum where flavour/taste is irrelevant, they're just coating it in as much spice as possible to try and kill a person. I am still annoyed they were too much for me though, I went into them pretty confident.

i like wings, but dont like something that's crispy or breaded and deep fried covered in sauce.

watched a video a while back of some butcher youtubers trying various methods of cooking wings. the one that suprised them the most basically involved..
1- microwave raw wings in a bowl of water for 15min
2- chuck on a wire rack uunder the grill, cook for 10-15min to get crispy/desired texture.

Salt and pepper on the wings and then into a roasting tray with some oil.
About 30 mins at highest oven temp until outside crispy.
Cover in Franks wing sauce as soon as they come out of oven.
Not complicated

Salt, pepper, garlic salt and flour to coat.

Oven cook for 45 min, turning a couple of time.

Frank's sauce into a pan... Heat with knobs of butter and splash of Worcester sauce.

Coat wings.

Eat.

Saw this thread earlier and thought, must do wings again... Aldi sold out of their £1.49 a kilo fresh wings frown

Oh well, maybe next week. I do similar to the Youtube link but in the past I would normally fry.

Might try smoking then grilling this time.

No , you can have a dipping sauce on the side if wanted but they have plenty of flavour already.

No , you can have a dipping sauce on the side if wanted but they have plenty of flavour already.

Baking Powder
Garlic Granules
Salt
Pepper
Paprika

Mix together, coat chicken then spray with spray oil. Air fry for 25 minutes turning half way through.

Have on its own or with spiced mayo.

This is the recipe I use for wings, reduced the amount of salt as they were a bit too salty for my taste.

Website is annoying and full of ads, but the recipe is worth it.

If you're out with mates, their Snake in a Basket is good fun. One Viper, mixed in with 7 Original (mild) or Woof Woof (medium ). Like Russian Roulette.....with chicken!
