So, there is an advert on tv at the moment which shows asparagus and new pots. The asparagus is served with hollondaise sauce. Can anyone suggest an alternative non mayonnaise based sauce to accompany these 2 foods and also salmon.

Hollandaise isn't mayonnaise based. What are you trying to avoid?

Egg based and anything Mayo.

Tarragon with those three. Or maybe horseradish?

Also, you could use creme fraiche rather than a roux - no flour and easier too.

Bagna cauda..
A great dip..
And could also be used as a dressing for your spuds..
Added whilst spuds cooling down..

White or green asparagus?

Presuming green- try BBQing it or cooking it on a griddle pan with some olive oil. No need for a dip.

Olive oil, white wine vinegar, dijon mustard, finely chopped shallot and a clove of garlic. Stick it in a jam jar, shake it then drizzle over. Lovely with griddled/barbecued asparagus and particularly nice with white asparagus.

Beurre blanc? Or, for boiled potatoes and asparagus without the salmon, just melt some reasonably good butter.

Lightly boiled Asparagus with a soft poached egg. Simple but does the job.

Beurre noisette is wonderful with both asparagus and Jersey Royals.

Melt butter over a low heat until the water is driven off and the milk solids remain, then raise the heat until the milk solids brown. Allow to cool a little then add a good squeeze of lemon juice. It has a lovely nutty flavour with a hint of sharpness that works very well with asparagus.

Might be a bit obvious, but asparagus with Belazu balsamic is lovely (especially with some nice parma ham and shaved parmesan)

Is it me or has Belazu balsamic got a bit crap in the last couple of years.

It used to be like treacle - now it's dissapointingly thin and watery
