I seem to remember that the dad of two of the original band members (the Reno brothers) was the author of Dueling Banjos. It was started as a spoof tribute band by "proper" musicians. The name's a play on "AC/DC" as their first album was all covers of that band...

Assuming you are not given to hyperbole can I ask what you found quite so astonishing? I am guessing it was something more than just that fact that professional singers can sing. 
IMHO, Joules' normal show is easily the best but I thought every act on the Houtenany was pretty exceptional. I thought Hayseed Dixies brought good humour while also being exceptionally talented musicians. The house band and session singers added enormous value to all the tracks they were involved in.
Jools' house band consists of many members of his Rhythm and Blues Orchestra which are, of course, excellent and can do little wrong as far as I'm concerned. I switched between the Hootenanny, Queen and the fireworks and back so didn't see all of the performances but generally to my ears, Joss Stone tried too hard and Ellie Goodling was poor. Paloma Faith is always amusing but not exactly musically brilliant. Ed Sheeran was his usual self and while a big fan of his 35-40 years ago, Boz Scaggs is past it (as is Ronnie Spector - awful). Best were probably Paolo Nutini and Hayseed Dixi but that was about it from my perspective.
