The car has a slight problem with the steering, in as much that there seems to be a bit of free play around the centre point. When driving on a flat, smooth piece of tarmac, there is no problem, and the steering feels okay. However, when going across really lumpy/cambered roads, the car veers to one side.

Strangley, when it veers, the steering wheel stays in the same place, but doesnt weight up. Does this signal the end of the steering gear, or could it be down to bd suspension??

Worn steering rack?

You should be able to find the free play by jacking up the front end and getting someone to rock the steering wheel gently back and forth while you grovel underneath inspecting the movement of all the points at which one bit of metal moves another.

It is likely You have worn track rods and/or worn upper strut bearings.
There is an adjustment on the rack to modify the feel but it generally does more harm than good to fiddle with it.
worn front suspension components are the most probable cause.
