I had to look up the Stelvio pass, I had no idea what it was & I now have to say I agree with you completely. me too, i like UK sportives but I do want a bigger challenge now, I'll aim to finish with "gold" standard times now but i cant get out as much as i would like to build up long base miles so just finding some huge mountains to climb seems like a sensible plan!!!

Today I was on the road-tyred single-speed c/w mudguards. I do also have a chunky CX bike, which currently has road tyres and canti brakes (no mudguards), and I mainly use it for cafe road rides. I don't have a "propser" road bike. Now my N+1 reasoning is:
Revert the CX bike to mudguards and CX tyres for wet commutes;
Use the single-speed for dry commutes;
AND
Buy a super-light road specific bike for cafe rides.

Took the long way home yesterday, 46 km from Chiswick to Carshalton (it's normally 22km) via Richmond Park, Hampton Ct, Claygate, Chessington, Epsom. And a really muddy bridleway crossing the A3, which was solid concrete when I last rode it 10+ years ago!
In retrospect that was a fairly idiotic ride for a 17 stone lardy to do on a single speed road bike with road tyres......
But it took me over 600km for the month so I'm a little bit "stoked" as the younger folk might say.
