32H Rim Selection - Advice Please

Hi all,
My front hub on my stock Shimano RS10 wheelset has decided to munch itself, so I've taken it as an excuse to upgrade the wheelset with a bit of Birthday cash. I've ordered some Hope Pro 3 hubs from Wiggle and I'm going to get my LBS here in NYC do a custom build for me. They'll provide the correct spoke length and nipples depending on my rim selection, which is my next decision to make.
They are for my CAAD9, I was considering going down the Chinese Carbon (38mm or 50mm) route, but given that I'm not exactly Bradley Wiggins at a slightly heavy 105kg, there's no point in trying to shave off a few grams with carbon wheels. I've done hours of reading about the Chinese carbon wheels, and I was very tempted, but something was just niggling at me that it wasn't a great idea, I'm not sure why. Perhaps it was the lack of support, perhaps it was the 'wannabe' factor, perhaps it was the fear of a carbon rim failing on me. I can't put my finger on it. Instead, I've decided to do down the route of an alloy rim, which has quality, strength and reliability for someone of my weight.
I was quite happy with the stock RS10s, they've lasted 2.5 years and have only needed minor truing a couple of times, incredible considering they were running a 16F/20R spoke count and I do enjoy mashing on the big cog from time to time. They do seem to flex a little bit when out of the saddle giving it some beans on a sprint, but overall I've been impressed. I'd happily consider RS10/RS20/RS30 rims again, but I can't find them;
a) available to purchase in a rim-only format without being part of a pre-built wheelset and
b) in a 32 hole configuration to match the Hope Pro hubs I've ordered
Therefore I'm considering the following alternatives:
- Mavic Open Pro (black) - generally receives good reviews online, comes in 32H config, not sure whether they would cope well with 105kg rider?
- DT Swiss R520 - second favourite, perhaps on the heavy side?
- DT Swiss RR585 - current favourite so far, I like the 30mm dish, great reviews for strength, slightly on the heavier side also?
Does anyone else have any suggestions for a 32H rim? Needs to be black (to match my colour scheme
), not need constant truing, slight dish preferred only for aesthetics, weight not TOO important, but I don't want to feel like I'm spinning up cast iron wheels under me either.
Once I've got the new rims assembled I'll probably strip down the RS10s and get some replacement hubs for them to keep as a spare set and to practise wheel building myself.
So, over to the floor, recommend me a rim!

In the UK, yes. It's usually the case that the shops can't get them from the distributors, and the distributors not able to get them from Shimano. There's just not that much call for them: the only people who'll ever want an RS10 hub are very small minority of an already small customer base.'nuvva suggestion is the Ambrosio Excellight. Similar to the Open Pro (double eyelets etc, etc), just a smidge lighter IIRC. I opted for the Open Pros for my wheels on the wheelbuilders recommendation ("Just as good, but a bit cheaper").
Also hearing many positive things about Velocity rims, although I've no experience myself.
EDIT: 30mm aluminium rims will be HEAVY, which places a fair chunk of weight at the worst place on the wheel, i.e. the outside.
