i went to an air show at Sion - fantastic location / scenery - saw a Mirage do a JATO - one of the best spectacles I have ever seen.

fast forward to 10:45 to see the hit (not too dramatic)
then 11:55 the mustang on finals, can clearly see damage to the port elevator

So pleased the pilot got her down safe

To generate more lift for takeoff due to increased angle of attack

It was a specific feature of the FG1s operated by the Royal Navy. The length of Ark Royal's deck was limited and the nose needed to be jacked up so that the wing generated more lift in the short take off run. US Navy Phantom's didn't need to do this as the decks they operated off were longer and, of course, land based Phantoms didn't need this feature either.
