Can you burn coffee with boiling water?

Yes. Undoubtedly. I've tried to tell our works canteen several times that the hot water delivered by their bean-to-cup machine is too hot, but they do not listen. Then again, the coffee is still better than the rest of their food (and the coffee is 2nd-rate beans to start with).
