Never chop a Beetroot up before cooking it, ruins it. Always do it whole, and with a good inch of green stuff left sticking out top. Wash it carefully too to prevent damaging the skin too much!
Personally I just stick them in the microwave for 10 minutes, in a good size bowl with a splash of water in the bottom. If you rub the skin and it comes off, it's done.

I thought of another. Small piece of beef fillet, seared in a very hot pan so its still raw in the centre. Slice as thinly as you can. Lay out on a plate and cover with a mix of creamed horseradish and beetroot (use a ricer* to get it really smooth)

Substituting a bit of smoked haddock for the beef is also very good here. As canapes, slice the beet root in a disc and use cracker style. As a salad, the beets cubed in with fish and horseradish dressing is nice.*not a JDM Honda
