I've been trying to contact Kenny for a number of years now. 'Kenny Miller' is a common enough name, and no luck. Searches in chef forums have turned up nothing.

I know he was working in London in the mid-90s, at Cactus Blue on the King's Road. I'm lucky enough to have eaten there and it was sensational.

The book is long out of print and I imagine no royalties due.

It's often forsale on some of the book sellers. I got a copy cheaply and in great condition.

Doesn’t help that he is Scottish and there is a Scottish footballer with the same name.

Before working for Brian stein at Cactus Blue he had his own place in Hampstead called Kennys

Given he stepped down in 2000 due to ill health, it's possible that he is either fully retired, or no longer with us.

I tried companies house as well with no luck.

I know I'm a bit of a broken record on this, but if there's one book I'd return to a burning house to save, it's that one.

Bloody hell, I bought a 'very good' used copy off of Amazon on Tuesday and it was only £4.54!!

I've tried many methods and no luck; I think he is either retired or no longer with us.

I had a conversation last night with a friend of mine who grew up in Texas and we were talking about this chilli recipe as they were moaning that you can’t get decent chilli over here in restaurants.

When I said that what surprised me about the recipe was the inclusion of oregano they said “all decent Texas chillis have oregano in them because that’s how you get the lemon flavour”. Wait… what? Lemon flavour? Turns out there is a Central American herb called “Mexican oregano” which is a completely different animal to what we think of oregano and has lemon and licorice flavours….,.

Have we (or maybe it’s just me) been making jailhouse chilli wrong all these years?

If you want to make "authentic" Texas chilli, you need the authentic Texmex spices.













No idea where you'd get them in the UK though. I used to fill my suitcase on work trips to the States with goodies like these.

Interesting! I've always said there is too much Oregano in this.

Interesting! I've always said there is too much Oregano in this.
try using sumac, which has a citrus note

I use Mexican oregano in some dishes and wouldn't describe it as remotely 'lemony'. If anything, more like 'weed'. Use sparingly - half the quantity of European oregano - else it will completely overpower the dish.

I personally think the JC recipe as Kenny wrote it is optimised for European oregano.
