One of the joys of working from home is being able to start a chilli in the middle of the day on a wednesday.

Going to get it going at lunch time, should be ready by dinner laugh

Indeed, started mine last night in the oven now for 5 hours (ox cheek)

I know I'm a bit of a broken record on this, but if there's one book I'd return to a burning house to save, it's that one.
Any other good recipes you’d recommend? I just always turn to the chilli page.

The jambalaya recipes are good

Amazon normally, this was cascabel, ancho and chipotle.

Mines is vegan so it's just giving the veggies and beans time to cook down properly.

I never tried ox cheek, my go to beef chilli was always brisket. I fancied giving an ox tail chilli a go but the process is a faff, you have to let it cool and skim it a couple of times.

Ox cheek gives off a lot of fat and normally I'd skim it but I trimmed most external fat off so theres not a huge amount this time.

Cheek is very, very forgiving. 4-5 hours at 160 and its literally spoon soft.

Ox cheek is a great cut for Jailhouse.

As are skirt steak (Costco) and Tesco frozen 'casserole beef' at £3.50 a bag. The casserole beef is like tractor tyres otherwise, but in this recipe and slow cooked it melts down into a lovely savoury unctuousness.

Now it's July, I've just gone and bought everything I need. hehe Going to make it tonight for dinner tomorrow (and left overs for the week I'm sure!)

I have some chipotle paste, which I know adds a great flavour. Also a small amount of chorizo I might just use up, as it's been knocking about the fridge for a month.

But also tempted to do it as the recipe for my first go. Decisions!

Have a Jailhouse Chilli from Kennys cookbook on the go right now. Halved the chili powder and the jalapenos to keep it kid friendly, will be served with Nachos, Leicester, and cheddar cheese (could not find Monterrey jack) and perhaps a few jalapenos.

It’s not particularly spicy with the whole lot in.
