I've gone sous vide. Just a fairly basic set up for now so I can see if it's a fad or not.

After having a go this evening and obtaining some good results I'm really
Pleased and think I'll use it a lot.

Forgive my impertinence but, you can't brown meet in a sous vide so what are the lovely meet shots about?

probably a blow torch at the end of the cooking to make it look more edible.

when doing it, dont buy the crappy over POS that is a cooking blowtorch, just go and get a handheld hardware propane torch instead.

It will have been cooked at 56 degrees C or something similar for an hour or so, so it will never look like leather sole ever.

In fact I believe you could leave it at that temp for hours on end and it would cook no more than perfect.

Love the sous-vide cooking. Something I hope to experiment with, once I move house.

Last nights offering was a Creamy Penne Pasta with Pancetta, served with a Romaine Lettuce.

I think for me this sums up the conundum I have with sous-vide beef. It's a great concept and there is no doubt the meat is lovely and tender and moist, but I love a good caramelised crust still.

You can still sear to a better crust but this was my first go and didn't want the heat to penetrate any further.

Higher temp, more oil, or even deep fry.

Seriously guys, it's worth a try for the money.

I've now got short ribs and beef cheeks on the go.
