Need go cook a steak for 5 (so around 1kg) that will be the other side of medium, no pink on show.
Something fatty, but what and where from?
Are you cooking for children? Something fatty, but what and where from?
It‘s a waste of steak, but I‘d be going for a ribeye and dry brine and reverse sear to make the best of a bad job. Cote de Boeuf would also work, but obviously factor in the weight of the bone.
Local butcher for sourcing?

You'll be wanting to weigh without a bone, which for 5 adults (I'd aim for more like 300g uncooked weight FYI) takes you out of range of most 'steaks' and into roasting joints.Something fatty, but what and where from?
As the other chap says, I'd be looking at a couple of beef ribs, somewhere in the 2kg region.
Alternatively, you could do 2x cote de boeufs if you wanted the theatre of cooking steak.
I know it's not home cooking, but I thought I'd appeal to the internet here, at the core of beefy knowledge, instead of a holiday thread......
Off to Florence soon and there's only one thing on my mind - bistecca alla fiorentina
Any personal experiences of good restaurants to enjoy this fine dish?

Honestly, I wouldn't do steak - at least not in the western way.Something fatty, but what and where from?
Either braise some short ribs or look at asian ways of cooking beef (very thinly cut, marinated, cooked quickly but all the way through e.g. Korean bbq)
