My effort, which is Vietnamese 'surf & turf'.

Sirloin marinated in nam-pla, lime juice, chilli, garlic, palm sugar and mirin.

Squid soaked in a marinade of nam-pla, chilli, mirin, soy, ginger and palm sugar

Salad of bean sprouts, mooli, coriander, chilli, mint, cucumber, spring onion, tomato, blood orange, plum and crushed toasted peanuts.

Dressing of nam-pla, chilli, garlic, mint, coriander, lime, pepper and, you guessed it, palm sugar.





Crazy flavour. Some left for tomorrow too!

Very much so. Charred beef and sweet orange was excellent. The Plum was a step too far but needed using.

Bugger, just noticed this one! Experimented with a bunch of a bunch of new meat on stick recipes last weekend of the BBQ I could of submitted.

These are my photos and instructions
First dig a pit bigger than what youre going to cook. Mum says fish like trout or salmon is really good to cook. 



put some rocks and bricks in it and build a fire with logs and we used some charcoal too to be quicker. Logs take a long time to burn down







Put your food in foil and in the pit on a foil tray over the fire put more foil over that then fill over with the earth



It takes a few hours to cook and is hot when you dig it up. 


Mum says it is based on a Hawaiian Luau  

for my beans I put brown sauce in to make them a bbq flavour. 

It was good fun

I don't remember how much it was as I bought it years ago, they have redesigned it singe I bought mine. It is a fast pitch or pop up tent, goes up in seconds. Thats a three man and here is the current range.
