Timing question here...
In a couple of weeks we have the airshow here, kicks off at 14:00, usually finished around 17:00ish, so assume I'd be back around 18:00.
We've got friends coming over for it, and I said I'd do a BBQ, but want to get away from standard fare which normally is fine, but I'm not sure won't be trickier given I'll be out in the afternoon - I was thinking something like a stuffed belly of pork or pulled pork, maybe some beef or ribs as well - with wings etc. on the side which can be cooked rapidly.
How would you plan your timing for that - given that I want to slow cook them, but will be away from the house for a good chunk of the afternoon to keep the coals stoked.

I recently did a huge bbq for my birthday, and did both pulled pork and brisket on separate weber clones.
As I didn't want to faff about while loads of people were there, I bought a cheap roasting tin, put the rubbed meat over the top and filled the edges with briquettes.
Lit half a dozen, and placed them at intervals on top of the unlit coals.
They both cooked for ten hours without any real need to interfere, but the first hour I made sure everything was going well.
I'd recommend brisket, it was my first compared to many pulled pork joints, and found it far more forgiving.
Would imagine that's down to having less fat compared to pork, which can cause funny things to happen in timing due to the 'stall' when the fat is absorbing all the heat and rendering instead of increasing the internal temperature.

As above, for a recent BBQ I did a 5kg pork shoulder and a 5kg brisket, but on a Smokey Mountain.
The brisket took 11 hours, the pork 13.
In the meantime I did a dozen racks of ribs, which had about 1.5-2 hours in total.
What was handy was having a couple of remote probe thermometres, so I could see the internal temp of both the pork and brisket without needing to lift the lid.

after reading this thread I have just purchased a weber smokey joe premium and a chimney starter, o and a 3kg pork shoulder hoping to try it when the mrs brother comes down in a few weeks.
have got a rub kit from the spicery and will try that.
anyone got any tips for a newby? I would like smoke it for 6 hours with maybe 6 hours of pre cooking in the oven.

Put the rub on it the day before and keep it in the fridge overnight.
Take it out of the fridge about an hour before you're going to start cooking it to let it get up to room temp slightly.
And personally I'd smoke it first, then finish it in the oven rather than the other way around - can't give you a scientific reason for doing that, it just makes sense in my head
Do you have a thermometer in the lid / a probe one for the meat? You need to keep the heat fairly constant around 250F (give or take), and you need the internal temp of the pork to hit about 190F.
Take it out of the fridge about an hour before you're going to start cooking it to let it get up to room temp slightly.

I picked up mine this afternoon from Argos, there was only one in the 10 nearest stores to me, and it happened to be at my closest store, and 57cm too, result!
I have a question about wood for smoking. I'll be having a go at the normal ribs, beer can chicken, pulled pork etc. Do I want chips or chunks? Are the Weber bags a good buy (how many bbq sessions do you get out of a bag?) or is there a different favourite amongst PHers?

Yep, got mine - last one within about 15 miles - at lunch time, 57cm too! There is a Quidco offer on at the moment for 6% off garden and DIY, but doesn't include reserve and collect. Still, got a £10 off next purchase with mine too. I'll call that £97 then
