What is that boning knife mate? I use boning knives for almost everything at home as I can get them mega cheap through the butchers I work in, but i'd really like one without a protrusion on the bottom of the handle to allow you to rock the knife back and forth chopping stuff - yours seems to be a cross between a boning knife and a chefs knife - would be great to have in the drawer.

It's been brilliant and is easy to hone.
I paid £4/kilo for the beef. It's not an abattoir but a wholesaler.
