Has anyone ever tried this stuff? Part filth, part gourmet, especially with recent trends incorporating lobster, caviar, truffles etc?

Almost the national dish of Canada.

I've only had the basic version - chips with gravy and cheese curds which are sort of like half way between butter and cheese spread. It was OK, nothing more.

It's reason enough to go to Canada. I try and recreate it at home but it is never quite the same

I'm living in Montreal from last Thursday and had it yesterday, it looks utterly horrible but it's the most beautiful thing I've ever eaten.

So this dish is a bowl of chips, with lumps of curd cheese, (a similar texture to Halloumi?) , covered with a chicken or veal gravy? Right-ho.

Love it. Been making it all weekend - awesome for hangovers. Everyone I mentioned it to thinks it sounds disgusting, so I gave them some. All converted now!

It's always been beef gravy when I've had it.
