Carrot Cake

In my opinion you really cannot beat a carrot cake.

Being a Sunday, and what not, here is mine:-



How do you bake yours? What do you add - pineapple, raisins?

avast with your vegetable comtaminated patisserie.

I've never "got" carrot cake. I don't find it unpleasant in taste or texture. I object on a philosophical level. Each to his own but it's a cake for goodness sake. Vegetables are for dinner not for tea

Carrots and sultanas in mine - also use veg oil, not butter.

Its one of the only cakes I actually like, as it is moist & sticky, nothing like the sawdusty victoria sponge.

I add crushed pineapple and sometimes flaked coconut (not the really sweet dessicated stuff). Walnut halves and sultans can be nice but not always necessary.

I do love my carrot cake, it is very rare I come across one better than mine

I do not understand people eating carrot cake, sure during the sugar rationing period when they were looking for something to add to cakes as a replacement to sugar. Either eat a cake, or eat a salad. Do not try and combine the two!!!
