You can only have upto 10 lines on a poll and with the number of entries this month, MC has had to split it into to poll threads you see.
Whoever gets the most votes wins as normal.
Ok... heres a rough recipe i used to do my BBQ entrant, i'd imagine you could achieve a similar effect over a hot griddle pan.
Comments & Criticism would be greatly appreciated as often i make it up, but never have i before put it down on paper (so to speak) for others to read!
Ancho Chilli Rubbed Sirloin on a bed of Cuban Style black beans]
(steak cooked on the Weber BBQ ; smoked with Hickory chips)
For the Steak:
2 x Sirloin Steak (buy the best you can afford...its worth it)
For the Rub:
1 x Ancho Chilli (a dehydrated smoked Jalapeno from memory)
1 x Tbsp Smoked Paprika
1 x Tbsp Szechuan Pepper (i only used this as i'd foolishly run out of normal black peppercorns)
Good Pinch of Sea Salt
1 x Juice of a lime
1 x Tbsp olive oil
For the Black Beans:
250g Black beans (this is a wet measurement) I struggled to find these in mainstream supermarkets, but found them in Sainsburys pre soaked
1 x green pepper
2 x bay leaves
3 x Garlic Cloves (roughly chopped)
1/2 tsp Cumin
1 Onion (roughly chopped)
Tbsp Chopped Oregano
White Wine Vinegar
1 tsp caster sugar
To Serve:
Sour Cream + Chives chopped in if you can
Plain Salted Tortilla Chips
To Cook:
Get the STEAK out the fridge 30mins prior to cooking
Stark soaking your wood chips (i used Hickory)
Grind up the spices in a pestle and mortar
Squeeze lime & olive oil over the steak
Rub the spice mix all over and set aside for 1 hour (could probably go longer)
Stick the black beans on the hob on a medium heat (with enough water to cover), chop the green pepper in half and chuck that in as well. Get it to the boil and turn down to a simmer... let it simmer for 45mins
Get your arse outside and light the BBQ
Next pour 1 tsbp of sunflower oil into a frying pan over a medium heat
Into the pan put your chopped onion and the garlic and cook for 5 mins
Add in the cumin & oregano and let cook momentarily.
Pour in the vinegar and sugar and allow to cook for a further minute
Drain the cooked beans, remove the bay leaves and 1/2 green pepper, and mix in the contents of the sauce pan (onion & garlic) also at this point chuck in the other half of the green pepper and leave covered on the hob on a low heat.
By now the BBQ should be upto temp... stick the drained woodchips in, and stick the lid on
I personally leave it a minute to get the smoke started and the grill super hot
Whack the steaks on and get the lid back on - try not to lift the lid off during this bit. I cooked mine 3 minutes per side and ended up with the results show (somewhere around medium)
Take the steaks off and allow to rest
Give the beans a quick gentle mash up
Plate that baby up and serve.
