AC switching question

Is it possible to change the Ultima supplied AC rotary control for a simple on off switch?

It seems there's little point in temp control on these, it is either off or on full cold.

Would like to change mine to do this - anyone done similar?

Would the pressure switch in the system not safeguard it? I thought it cuts in if pressure is too high or low?
