I won’t add to the already lengthy list of suggested destinations, but as for the “how?”, I’ve used Trailfinders in the past for this kind of trip and they’ve always been excellent. Knowledgeable staff who will almost certainly have visited many of the places you’re interested in. I’ve never found them any more expensive than doing it myself - indeed they were cheaper for certain hotels and flights - and they do all the hard work.
Happy to help with any info - lived in Brisbane for the past 15+years.. heaps of things to do here.
Weather at that time of year in SE QLD is hot and humid - typically 35deg and 80% humidity.. rains a bit

The drive from Brisbane to Syd takes 11/12 hrs - but stop at Byron, Yamba, Coffs Harbour, South West Rocks, Terrigal/Avoca Beach

A couple of tips for Brisbane:
If you enjoy seafood check out https://theprawnster.com.au/, they supply the seafood and drinks and you just take whatever else you want to eat as sides/salad/bread etc.
Felons Brewing Co. always has a lot on for days and evenings, beer/sport/live music.
You can hire kayaks and paddle up and down the Brisbane river, ignore what everyone tells you about bull sharks in the river....you'll be fine as long as you stay in the kayak! It's a nice way to see the city.

The town is about 100m behind me at this point - I’ve just driven Sydney to Surfers for the second time in two weeks and always stop at BB as one of the breaks.
Everyone’s opinion is their own, and I know there are problems in the town, but to call it a dive is probably a bit of a stretch…
Anyway, there are other places to see and go between SEQ and SYD!

I stayed around 12 years ago and then more recently and I hoped the 2nd visit we would find it better, but not really. We found other places along the coast to be far more pleasant, obviously personal taste, but it felt like most of the food/drink outlets were geared towards backpackers and nothing much else, at least within walking distance of where we were staying.
The beach is nice, but nothing better than all the many other beaches along the coast.
