I agree with XJSJohn - you don't have enough time to see Vietnam, if you chooose HCMC - and do fancy doing one tourist/educational thing I would recommend this:-

I can highly recommend the Chiang Mai Thai cookery school in Chiang Mai (funnily enough!), I think it's run by a Thai celebrity chef - not sure of his name, but we had a great day there and learned a fair bit too.
I think it was about 30 quid when we did it a few years ago, and it lasted a full day with a trip round a local market in the morning, and then you are shown how to cook 5 or 6 courses in the afternoon. The best part was eating everything you had cooked, everyone was absolutely stuffed by the end of day!
You get a decent recipe book, which I do actually use from time to time back home when I finally get round to a trip to the Asian cash and carry...!
I'd second HCMC if you only have a few days in 'Naaam, there's loads to do in the city itself, and I'd say a trip to the Cu-Chi Tunnels is worth it while you're there. Hanoi was great too, but if you were going up there I'd say it'd be worth taking a few more days and doing a trip up to Halong Bay, and Sapa while your up there.
Have a great trip and report back when you're home, we fly out for the best part of a month on boxing day, so I'll be interested to hear what you got up to!
