Surfing on the Cote Sauvage West of Royan (La Rochelle also worth a visit)
Cabalie wine from Maury in the Pyrenees Orientales (pop into Andorra for some good scenery)
Grand Canyon du Verdon North of Cannes
Pont du Gard near Avignon (and Avignon, Nimes and Arles - not sure if they still bullfight in the Roman colisseum there......)

I only really know Brittany, but presumably you will be passing through there at some point?
There's some good surfing around Pointe de la Torche. Penmarch light house is interesting while you are there. Most of the Brittany beaches are lovely. Concarneau is an interesting old port. Quimper is a modernish town with big stores including a Decathlon. There's also a shopping extravaganza at Lorient next to the N165. There are no Autoroutes but the N165 is dual carriageway and fairly quiet. The lanes are very quiet so lovely for cycling if you have bikes with you. Signposted VTT tracks is the national cycleroute. All the sea food is wonderful and as fresh as it gets. Creperies are also in abundance, reasonably priced and filling.
If you like military stuff there's the D-Day beaches back up in Normandy, Lorient U-Boat pens, The Resistance Museum (http://www.resistance-bretonne.com/) where you can have a ride in a halftrack, but only go if you are passing rather than going for a day out, and likewise the Bunker at Nantes.
The zoo at Pont Scorff and aquarium in Brest are great, but one of our favourites is the animal park at Branfere, http://www.branfere.com . The kids will love the net scrambling!

Mont St Michel is great for parking if you are in a motorhome and well worth a visit too 
Aside from all the great stuff in the area( WW2 stuff; Bayeaux; etc etc) we found an interesting little car museum when we motorhomed in N Western France a few years ago called

After that I will watch suggestions on here myself as I am planning a trip for next summer down the west coast to Begerac (and maybe further over the Pyrenees as well)
I reckon in 8 weeks you could do some real ground coverage in France without it becoming a route march. We spent last summer over in Les Grande Alpes which I would recommend also (taking in the Gorges du Verdon on the way.). We stayed at Castellane when visiting the Gorge. Briancon is also worth a visit over there as well with the fortified old town...and it claims to be the highest town in Europe too.
