Activity Holidays - any recommendations?

Hi PH world!
This year will be the first since 2003 that I've not done a big European driving holiday. 13 trips now, I've decided to take a year off.
So, the other half and I want to do something a little different and consider some of those activity style holidays. Nothing massively off the wall, like climbing a big mountain for a week, but maybe a week's worth of different activities - anything really, we're game to try new stuff!
Has anybody done anything similar and have any comments on what makes a good/bad one, or any recommendations on specific companies?
We're looking at going in September (after schools are back). Budget wise we won't have a lot - say 500-750 each, but there seems to be some nice offerings for around that.
I've seen some companies tend to do activites in the morning and then time to yourself in the afternoon - that quite appealed, or the other option was to do 3 or 4 days of something, and then go somewhere else for a further 3 or 4 days to wind down.
Open to some thoughts really - knowing the active types that are around the wonderful PH world I thought there might be soem good experiences or different ideas?!
