Greek Islands - Thassos, Crete or Corfu?

We're looking to book a holiday to AN Other Greek Island and so far the ones with flights that match our travel dates are as above. Never having been to any Greek Isle before I'd appreciate any thoughts, places to stay, must sees etc? We want a reasonably chilled holiday but nothing too out of the way - some tavernas, shops etc would be good to mooch around in.

That looks very nice - what was the town/local area like/ Whilst we want relaxing and unchavvy we don't want to be in the middle of nowhere
