Small update-
Still no news on whether I can reject or swap my car for a vehicle of equivalent specification.
I'm still stuck in the Z4 until Tuesday 20th of May, which is no good for me or my family
I'll be getting a 520d Tourer as a courtesy car for the next 3 months without any options, which is a shame as I specced mine with the Harmon Kardon audio system which is really quite important to me and a few other toys. Overall, I'm not too happy if I'm going to be paying for the next 3 months for a car with a lower spec than mine.
How would I go about rejecting the vehicle?
I'm not keen on having it back after 3 months sitting without any idea what's happening to it
I don't want an "inferior" vehicle for 3 months, if it was a few weeks, there would be no issue but 3 months really is taking the piss.
They don't know for sure that the car will be fixed via the software update.

I dont understand this either... How can this fault only be affecting your car and not be a widely felt/reported issue for other owners? Is it that from the loads of options available you have a rare combination causing the problem? Im honestly not being sarcy I just dont get it.. What has happened to BMW? I had a 535D, which I got rid of this year, and was by far the most unreliable car I have ever owned. I bought it expecting years of trouble free motoring, but ended up desperately disappointed, and couldn't wait to see the back of it. My mate bought a new 520D and had a similar experience. His was so bad, BMW gave him such a good deal on another, that he virtually got his money back. I certainly won't buy another "modern" BMW.

Having worked as an car transporter driver in the past, I have seen many dubious things that the dealers get up to, 'prestige' or not makes no difference.

What reason are they giving for not p/xing you for another new car? Surely that would be a winner for them, as they get the new sale, have the 520d back until the software update (which they are having to do/fund anyway) and then once it is fixed they can sell it. What is stopping you from buying the 528i or 530d right now?
Just write to them and formally ask them to refund the purchase price as the goods are not fit for purpose.
You may wish to ask for some proper legal advice, but if it comes down to it IMO the salient point would be whether the car is useable with this fault. Them asking you to park it up for three months/not knowing the cause would suggest that it's not.

3 months is taking the piss though
although allowing a repair doe snot mean you lose the right to reject it will make it a lot harder to reject 3 months later and you MAY end up in a 'repair cycle'
this has been recognised by Parliament and is being addressed in the new Consuemr Bill of Rights - although last time I looked the car industry was kicking up a fuss because it would mean consuemrs could reject a car for a few indivudal minor faults that needed repairing.

Sounds like they're only suggesting parking it up because OP is making a fuss. Given the description of the fault thus far seems to be that once a fortnight the car doesn't start properly, but having been turned off and turned back on again is tickety boo: I don't think anyone could make a decent case for the goods not being fit for purpose. Not saying that BMW shouldn't fix it, and it sounds like they are making efforts to do so - but grounds to reject the car? What planet would you need to be on?
