V5 ISSUES AGAIN.....

Hi everyone.
There is a SYLVA Phoenix on fleabay as I write which is still on the donor cars logbook, in this case an Escort.
The seller says the car passed MOT in December, which must have been computerised. Presumably the seller manages to tax it, but surely it would say FORD ESCORT on the disc.
If this is legal, ( surely not) then why don't I buy an old Sierra and use the V5 on the Phoenix I am building.
It does have some Sierra bits, if only the diff, driveshafts etc.
Would any insurance policy issued on the SYLVA be valid?
