Most sought-after non-RS GT3

If you fast forward 10 or 20 years, which non-RS GT3 will be seen as "THE ONE"???
By then, a boggo C2S will probably be faster so it will come down to feel, sound, looks, sense of occasion... that "je ne sais quoi" which makes it special.
My guess is it will be between the 996 MK1 and the 997 Gen2: The mk1 being the original, hand built, no driver aids etc and the Gen 2 being the final iteration of the Mezger, last of the manual....
If I had to pick one I'd say the MK1, in Zanzibar or SY and clubsport spec.

I think there are far too many variants for any single one of them to become THE one. Plus serious big money collectors will only be interested in mint RS versions. Non-RS cars should still be relatively valuable, but not sure if any particular variant will be worth significantly more than any other - condition apart. I'd guess 997s will always be slightly more valuable than earlier GT3s, especially in Gen 2 form. That's where I'd put my money if I was in the market.

I don't think you can compare the two in that way. There was nothing directly equivalent to the original 2.7 RS until the much, much later 964 RS and that's a pretty remote link. You could consider the 2.7 RS (and many people do) to be the last development of the very original 911 i.e. pre impact-bumper design. By that logic, the 997.2 GT3 should be the one people will eventually remember as the last development of the "manual" GT3. But I doubt anyone will really be that bothered about any of the newer cars in the same way they now idolise the 2.7 RS. There was only ever one original 911 and nothing is going to change that fact. Basically the longer the 911 lineage continues the more valuable the original will become.Whichever they built fewer of. But certainly the 996 or 997 would be the pick i'm sure.
The issue with the 991 it will be bettered. It is a car crammed for of technology and technology will only improve. The fact it is a damn good car will mean the 991 GT3 (Gen 1) will always go for healthy money, but well into the future i imagine it will be the bargain/unloved GT3, IMO.

depends when fuel runs out, interest rates go up or car TAX get so high on >225 CO2 cars to a level people cannot be arsed.
I for one only play with cars because saving rates are so low, if I could get 6 or 7% like a few years back on my money In a isa I would not be spending money on cars.

so pre 2005 cars are cheap to store and look after in that respect.

Its an interesting question and depends on many factors!My view is that they will VERY sought after and extremely valuable. In 20 years, we will be using driverless cars powered by hydrogen? Cars will just be transport.
Cars like the GT3 will be toys to remind us of the days when we used to drive.

in that case all the more reason to buy the car you truly enjoy to drive and drive the damn thing while you still can whatever the car is than worry/talk incessantly about car values...? (last bit not directed at you but more a general observation as there seem to be more posts about car values than what the cars are to drive whether on the older cars or the new 991 gt3....)
