Depends on the level of trade and location, very hard in a london pub but easyer in a locals, AS LONG as your staff do there jobs you should get 100% most of the time.Saying that the points system is very tuff, lost 4% on one last year for one bit of toilet paper in the ladys on the floor at 8pm n a friday while taking over £500 an hour!!

IIRC it goes broadly along these lines for at least an 80% score (at least for the chains I worked in):1: Acknowledge customers within 30 seconds at the bar
2: Inform of any delays in serving either food (busy kitchen) or drink (busy bar)
3: Keep the place clean
4: Be polite
The rest of it then just comes down to brand standards. Really not hard to keep to those standards with a small amount of training and staff competence.
