I had that once, going down the hill in Long Eaton for some reason I decided to take my hands off the handbars and stretch my arms. It was fine for the first 510 metres and then started flapping about so bad I couldn't grab the bars and smashed the crap out of my hands and wrist trying to get them.

How I stayed on I will never know, although I was only doing 35mph, just seemed to sort itself out.

Lesson learnt? check steering head bearing!
