Today I have mostly been setting up my new Note 10+

Happy with this for now. Are there any icon sets that change all the icons? I'd like a set of white icons. The white ones I've tried from the Samsung store only change a few of the standard icons and leave most of the apps, and I don't thing I've got any obscure apps on the home screen. Is it a job for Nova Launcher?

You'll probably need a launcher yes. Not sure how samsungs handle it. Take a look at some of the white lines icon packs. The playstore is packed with them.
