to those regulars on the track day events, do you think croft is a sensible start to track daying? my cerbera had a sports exhaust on it, so how hard will this be to get inside any noise regs?

Yes, Croft is a good place to start. I've done 6 or 7 days there, and it is a safe and exciting circuit. Not sure about noise limits, but I've never known anyone get sent home, and there have been race cars there on most track days I've been too. Maybe they're not too strict when it comes down to it.
