Are the outbuildings connected to the domestic mains electricity supply?

If so, you can use Homeplugs to turn your mains cable into Ethernet.

(I use them for my company laptop, which doesn't have wifi enabled)

You can hang wifi access points off the Homeplugs located in the outbuildings.

There's no magic answer to expanding Wifi range, other than to install more access points.

You might be able to use extenders too. To the o/p, some of the devices sold as "access points" can be configured to behave as "extenders". They then act as relay points, receiving and re-broadcasting data from your access point and computers. If it is set up correctly, it will give you one big seamless wifi network, but it can be a bit of a pain to get the access point and extenders playing nicely together, and the distances involved at your pad may be too big. Worth considering though.
