Fancy a change this weekend so I'm going to head down to the butcher and pick up a rabbit.

I'm toying with the idea of braising it in cider and serving it with either seasonal vegetables or a potato rosti or something.

Anyone got any other ideas?

I toyed with the idea of a stew but I think I'd like to go a bit more poncy with it to be honest.

That will work well, and as a suggestion why not try it with Yorkshire Puddings but put some sultanans in when mixing the batter. Rabbit and cider gravey with Sultana Yorkshire Puds...what a treat!

I've previously cooked saddle of rabbit, stuffed with forcemeat, wrapped in pancetta. You'll need one saddle per person and boning the rabbits took me ages!

Rabbit curry is rather good, must be cooked long and slow otherwise bunny is a bit tough when fresh.

Joliver has a nice rabbit stew with Tarragon dumplings, but it's not what you want by the sound of it.

yes

I love rabbit, it's hugely underrated and it's nice to see it becoming more popuklar on restaurant menus (although often at surprising prices!).

When I was a student (late 90's) I used to sell rabbits to a local butcher for 50p for beer money. 10 rabbits would pay for a few pints at the cost of 10 .22 rounds and a nice summer evening in the fields. smile

Dopn't get it often these days because my missus doens't like me killing wabbits. Wood pigeon and pheasant are fine though. And she doesn't mind me shooting crows "because they peck at baby lambs eyes" rolleyes Bless her. hehe

Could maybe try a traditional inland Valencian Paella? Rabbit and snails.

Probably not as delightful as some of the other suggestions though.
