I've read a few places but I'm still not 100% clear. I have a Clio I'd like to put on a hired trailer at some point in the future and tow however I'm a little unsure.
I have a Mazda 6 which I see has 1600kg max towing weight. Weight of car 1575kg.
I have a Clio which weighs 1110kg.
I have a licence with only B entitlement for towing.
I understand the max weight of everything cannot be more than 3500kg. Leaving me with a max trailer weight of 815kg
Is there a trailer which I can put my Clio on and tow it and is this within my licence restrictions?

If you max trailer weight is that high you can get pretty much any thing with in your license rules but not within the towing limits of the Mazda 6, 1500KG is not much.
A Brian James C2 Blue of some 3.5m load length weighs in at around 400KG with the Clio on top that is about your limit.

You have not quite got the licence rules
The licence rules work on plated weights not actual weights
Put simply ....
To tow a trailer over 750 kgs plated MAM weight on a B licence the one extra rule on top of the other towing rules is that the GVW of the towing vehicle added to the trailer plated MAM must not total more than 3500 kgs
If the towing vehicle has a GVW of 2000 kgs then the maximum plated weight for the trailer will be 1500 kgs = one example

I think your mazda 6 might have a GVW of 2055 kgs so the maximum plated weight for the trailer will be 1445
If it is plated higher than 1445 then you need to contact the manufacturer of that trailer to have it down plated
If you has a trailer plated at say 1400 and it weighed 400 empty then the max load for the trailer would be 1000
