No, they do not deserve our respect automatically. How you act and they act back towards you shuld determine if they deserve respect. For the majority of police officers they do show you respect back and are fine, some though, are dicks and think they are above the law.Tyres sound legal to me too. My alfa wears the inside edge smooth, but still an mot pass, as part of the 25% not counted.
As for attitude: respect has to be earned by both parties. I would expect a 20 year old to bea bit lippy. I do not expect police to go off on a power trip, with an "I'm the big man" attitude. Surely their training requires them to de-escalate tensions, not the opposite.
Still, it seems many of the police enjoy policing in that way, but its obvious to anyone sensible a quiet word and firm advice to the op would have been a far better outcome.

it is certainly less than 1.60mm but without a stated tolerance it is generally assumed to be +/- 0.5 of the last digit quoted, and 1.57 i well within that tolerance
what we are talking about here is 30 microns under the limit, i'm not convinced it is feasible for police to be measuring tyres to that level of precision, or if there is even any point to them doing so.
Can you imagine the up roar we would get if the police started to ticket those who did .1 mph over a speed limit, even if they did invent a speed camera that accurate it would be ridiculous
there was a thread on hear going mental about the plan for new zealand police to adopt a 'no tolerance' approach to speeding for 2 months, which was going to be 1km over the limit, not 0.1, and that plan got abandoned within a few hours
Sadly it sounds like typical Police Scotland tactics - targets to meet. I would have the tyre properly inspected and produce the evidence in defence.
I would also consider a formal complaint against the officer. I had to do this in Dundee nearly 40 years ago - was followed home every night from town centre, and stopped by overbearing know-alls regularly till I complained officially. My offence was that I had a modified Morris Minor - still have it, only much more modified.
It doesn't seem to matter these days if you are polite and respectful, particularly if you are young. Oh what fun they'll have with the random breath test stops with the new limits.
As an example of Dundee Police over zealousness, my son was stopped for having the fog lights on the car lit (my car - Seat leon Cupra, nearly new back in 2002). It turned out that there was a fault with the headlight switch that turned the fog lights on and my son told the officer he hadn't turned them on, but fine nonetheless. I contacted the Seat dealership the next day, and after investigating, Seat paid the fine.
However, in all honesty, I wouldn't drive around with Tyres approaching the limit, it's your only contact with the road - lesson learned in that regard perhaps.
