Have noticed the the Scamera vans in my area are parked rather oddly, in that they are parked on pavements on top of bridges, forcing pedestrians into the road as a result.

I have also seen one that regularly uses a farmers hardstanding on the corner of his field.

Is it legal to (a) be obstructing the pavement and (b) be trespassing whilst carrying out their 'safety' duties?

They can do what they like - they can get exemptions from the local councils to park where they like on public property.

Parking on a farmer's property can only be done with the permission of the farmer...

In that case they are definitely trespassing as the farmer would not provide his own urinary products if they had spontaneously combusted!
