Dont worry about the wind too much unless it is a far away shot or the wind is over 4. Intercepting is hard until you skill up in it and also buy the $200 boots. Those boots last most of the season so it isnt a bad thing. Once you get them you can get every one.
Another tip to passing is dont just pass it straight to the player every time. Try and lead him and he should be able to get past the defender or it just gets blocked every time.

Indeed it is. My wife and I have the same phone and because this game is such a battery-sapper I keep stealing hers 
I'm on level 21 now and have just 'done a Rooney' (Once a Blue, always a Blue - but I've just left Everton and signed for Man Utd for the money).

I don't know if it depends on exact stats, but I completed a successful season with Everton and got picked for England straight away. "A stunning debut" if I recall correctly I haven't managed to impress enough so far
