You're carrying on for 2 reasons,

1) Upgrading the simpsons characters makes their level visible after the event in some way - 'bragging rights'
2) After all the castle are fully upgraded for every 10,500 elixir you collect you get a free castle wall piece.

My castles suck (I only have the little sliver of new land at the bottom to play with) but as I was doing the rounds I thought this one was good

Yes I own all the land (and all the land in Krustyland) and have every building in the game. I no longer really collect any money off houses so I may get rid of a few rough estates.
