I have a short list of;

Red dead redemption,
Fallout 3,
Skyrim and
Gta5

I'm going to have a trip out later to see my dad on his birthday and have a trip to the game shop on the way back.

Make sure to go for "ultimate edition", "Game of the Year edition" or similar; they come with all of the DLC extras. Some of the original versions are still knocking around in shops at virtually no discount compared to the better ones.

as youve got a ps3, you should get the latest tekken, its a fighting game, has a story mode, survival and online type thing where you fight other peoples models and fighting style but dont actually fight them.

you need to try an beat 100 kills in survival, thats really difficult and will take a nice amount of time.

One thing I've found is that playing Skyrim and Fallout back to back can feel somewhat like you haven't actually changed game at all. They are both from the same company, Bethesda, and both use the same game engine I believe. There's a third title as well, the name of which I cant remember right now, but the three of them together are pretty much the same thing wrapped up in History/Fantasy, Present/Cool, and Future/Apocalypse skins.

Not to take away from the quality of the games at all, they are all brilliant, if buggy. I would just suggest sticking a different game in between to change the atmosphere a bit first

ETA: The new Assassin's Creed III comes out on the 31st of this month I believe, if you are off work that long...supposed to be epic. There's a thread on here somewhere already with some brilliant links

GTA5 is on everyone's short list! Sadly no release date yet. Although not expected until next year, you may still be lost in Skyrim then - it is fantastic.
