Vaporeons are excellent gym sitters and a pretty good at taking down the high HP Pokemon as they're high HP themselves. I have a 2500 CP Jolteon that loves demolishing Gyaradoses but for Snorlax/Lapras/Vaporeon I usually counter with a 2900 CP Vaporeon Jolteons are the best, takes down Gyaradoses very quickly
I see, I've only ever had one 90%+ IV Eevee which turned into the aforementioned Jolteon. The couple of high-ish IV ones which have turned into Vaporeons all have Water Pulse!
My gym attacker of choice is my trusty 96% IV Dragonite with Dragon Breath/Dragon Pulse followed by a Rock Smash/Stone Edge Rhydon and Jolteon for the Gyaradoses.

Slowpoke and Chansey increases will be handy, as I think they get more associated with them in Gen II. More candy for the grinder to get me up a level will be handy too.
The double candy for walking might really help me with Squirtle, Bulbasaur and Charmander too, who I caught some but not enough of in the last event.
Lures might be useful, but I'm never in one place enough, as there isn't a pokestop at home or work.
