You can adjust how fast the gimble moves, and the craft, and change the frame rate, and all sorts of automated stuff which lets the craft fly itself...
..but actually it's just a lot of practice. I'm no hero in this department, but I'm much better than I was when I started. (200+ flights ago)

One thing I would suggest to look at is how you hold the sticks. I'm guessing like most people you use thumbs because you're used to console controllers. But there's an alternative which gives a finer level of control which is pinching the sticks between thumb and forefinger. Might work in future.. But as soon as I set off, they followed me! Wouldn't leave it alone. Get trying to attack it. Good job this thing is easy to fly; I wasn't expecting to outrun seagulls on my second day!!
