I know it's a tad early but thoughts are turning to winter and keeping the car out of hedges.

I was thinking about a set of steels with winter tyres on them. This will also protect my rims from the worst of the salt etc.

Does anybody have any recommendations or know if I can use steels with standard bolts?

I'm not sure about steels but I swap to a winter tyre the same size as the standard tyre. I'm using toyo snowprox all round, 235 40 18's. They're really good and grip well on slush and snow. Day to day driving, they feel quite good but you can't lean on them like decent summer tyres but they certainly work well in heavy rain and standing water. I was getting them swapped on the same rims each winter but I've just bought a set of cheap 18 inch alloys and I'll be using them from now on.
My ST is a Mk3.
