Just to update and finish this thread off for future reference (hate it when you search old threads and there's never a sodding conclusion!), replacing the coil pack and ht leads sorted it, car now running fine.

Wish I had seen this earlier, HT leads failing are very common on Zetecs, and exhibit anything from a minor stutter, to a full on jolting. For anyone with similar problems in the future, they are easy and cheap to replace, so a very good place to start.
