Looking good.
Lots of enigne options. Just depends what you want and what you want to do. Ford and Chevy V8's and a few V6's have all been done in the past.
The RV8 is fine, just know the limits and cost you are building too. If you want 300hp then an RV8 might not be the best option.
I personally think a Lexus V8 is not a bad bet. A Jag AJV8 would make a good project too.
Lots of other options if you want something different. 2.0 turbo using Saab bits and the Triumph engine. Rover T Series Turbo or maybe a 200SX engine.
Btw - would putting e30 suspension on really be an upgrade??? I'm not sure it really would be.

Mine's been converted to take a turbocharged ls7 hybrid with auto box. The t56 does just squeeze in but the TH400 auto will be a lot stronger. All the hard works been done but I never got round to finishing it. I have rover struts, 300mm brembo's, 10 x 17 rear wheels etc etc, mostly all in a pile of bits lol. I'll get back onto it this summer I hope.

In a TR you can dump the cats though so 300'ish hp is not out of the question. Which considering the cost of the engine (£400) is good value.
As for mods. I think they are expensive if you want to stick n/a which is a shame as the stock cams are very mild. Most go forced induction though. It has forged internals and with a turbo/supercharger setup will run 450hp with no mods to the engine or a decent nitrous oxide kit if you preferred.
If you want to spend more then a Jag AJ is compact and good HP even more so with the factory blower. But it's more costly to get them running with a manual.
Next up a Chevy LS1 or LS2. 350-400hp stock and compact and light and capable of so much more.

I to have a soft spot for the sometimes unloved TR7. I've owned/built a couple of TR7 V8's in the past using the traditional Rover v8. I was recently talking to a mate of mine who owns/runs a rally car preparation company and he'd just finished putting an AJ V6 lump from a Jaguar S-type in a MK2 escort - all alloy duratech based v6 with variable valve timing - 240hp in the S-type probably a bit more when de-catted and does come with a manual box or will take the t5 gearbox - so i was thinking that with complete S-type available from around £1K if not less it may be an intersting lump to drop in a TR7 giving a good level of reliable horse power and while it wouldn't have the v8 sound track the MK2 did sound like a DTM racer apparently so i could live wit that! Just a thought. Any way keep the updates coming it'll be intersting to see how your lexus v8 conversion turns out.
